We source our ingredients from Vermont and New England farmers and producers, our neighbors and friends who put care and passion into all that they do. Nowadays it seems to be trendy to list farms and such on menus and placards, but for us it just makes sense to purchase within our community and help ensure that our strong agricultural traditions continue to thrive. Plus, we have found that the food grown and crafted locally just tastes better.
Our menu is a modern interpretation of traditional New England tavern fare and is also influenced by the classic cuisines of France and Italy. We cook with the seasons which creates a strong connection with the landscape and allows for a sense of anticipation and excitement. It’s a special experience to wait to enjoy the first taste of asparagus in the spring, or slicing into a juicy heirloom tomato during the summer. During the harvest months, when fresh produce is abundant, we set ourselves to pickling and preserving the bounty for winter, creating a well stocked pantry as generations of New Englanders have done before.
Keeping with the spirit of the tavern as a local ‘watering hole’ we pay careful attention and take great pride in our beverage selections. We are lucky to be located in Vermont, which offers one of the most dynamic craft beer scenes in America and beyond. We source our wines from producers who still cultivate the old-fashioned way, without harmful sprays and such, and whose vineyards have often remained within their families for generations. Our cocktails are built upon American classics and we utilize seasonal, local ingredients to add a unique element.
At Bluebird Tavern we sincerely seek to provide the absolute best experience for our guests and to create a business that strengthens and serves our community. We are constantly tweaking, changing, growing, improving and challenging ourselves. We do so mostly because we are a creative bunch loaded with ideas and we are also because we are fueled by gallons of coffee.
